This is a feature in Optifine, and it's widely appreciated. I too think it would be a wonderful inclusion into the Vanilla Resource Packs.

I dunno... I kinda like the distrusting "hmmm" sounds Villagers give.Also, this is barely covering interactions as a whole, but merely suggesting a "greeting" sound.
