The villages are likely abandoned because Zombies or Pillagers killed everyone... including any Iron Golems that might have been there.

Well, I do agree. But just a reminder, you can use Bone Meal on grass blocks to make flowers appear (it's different depending on biome), but even still, some flowers don't show up so it's harder to...
