As cool as that would be... I don't think it's possible for blind people to really play most if not any video games, since vision is pretty important for being able to actually play effectively.

You could always use a resource pack... but then it would be invisible on mobs and stuff too. :/ Invisible Elytras could be fun though. Like someone with a Superman skin or something. XD
