I heard in a Wattles video (in the comments of that video) that Mojang intentionally did this for realism because sulfur in real life would dissolve a lot of ores that would normally form in caves.

Not going to lie, that sounds awesome! Water charges could also make for a temporary water clutch when you have 0 buckets. Like stackable water buckets!
