My favorite ideas for a volcano biome are still: It has lava inside it and possibly as flows, but does not erupt lava. The "eruption" is in the form of a weather condition similar to snowfall, but ash. It this weather condition would only happen in this biome, perhaps when it is raining elsewhere. The ash would collect in layers like snow and could be collected with a shovel and used for fertilizing crops. Crops would also grow slightly faster in a volcanic biome as the soil is richer.
Perhaps when thunderstorms are happening elsewhere, an actual more serious eruption could occur, where the ash is heavier and hotter. It could have fire particles mixed in which are damaging and possibly light you on fire, but not light the ground on fire or anything built. Perhaps this volcano biome could also be way more likely as islands than for it to be inland.

The place with the most active volcanoes is in the maritime parts, in them the volcanoes could be surrounded by blocks of magma and sometimes, there would be volcanoes so large that they would exceed the height of the sea, becoming massive mountains in the ocean.

The waters close to the volcanoes could be yellowish, because in real life the temperature and acidity of the waters make it have this hue. In these waters there could be specific creatures, as hammerhead sharks living in them have already been reported, they could serve as a basis for some new creature in the game.  Here a photo of how the volcanic water looks like.

Underwater volcanos should exist too. They should have more magma blocks.

Instead of erupting with lava and explosions, treat the eruption as a type of weather for the biome. Smoke particles will come from the center of the volcano and a new ash block, similar to snow, will cover the ground in the biome

We now have that solid black block cooled from lava: basalt! And the Villagers would take netherite trades (they need netherite to survive the environment better). There can be volcanic smoke / lava rain / volcanic ashes as the biome's alterbate weather.

It would be cool if Volcano-Islands surrounded by ocean would exist. There would be a single big volcano with a lava lake inside. The volcano should be surrounded by a "palm-tree-forest". And as a generated structure a cave like temple with gold statues could exist. There would sometimes also be villages, with a new villager design.

Its atmosphere should also have the same ash particles in the Basalt Deltas. The crater at Y200 is really tall because that's only 56 blocks beneath the build limit, Y256.

The ash should also make crops grow faster because it has a lot of potassium.

The aboveground volcanos should be made of basalt, lava, magma, and maybe a bit of blackstone. But there should also be underwater volcanos with the floor at around Y20 and the crater at Y80.

    It should also have obsidian.

They should add this: If lava is out in the open for a while then it'll turn into one of these: obsidian, basalt, or magma.

Maybe the "cooled lava block" should be obsidian.

This is briliant idea, because it add a whole new place to explore and find new stuff, maybe in addition the high volcano's,climbing the non-erupting side of it,would be a nice touch to find chests with new blocks and also some of the existing ones too.

And maybe adding some 1.16 blocks? Like basalt or blackstone.

And this could be an infinite lava source!

For bedrock players, the eruption at least will make performance issues.. idk about this one? As a mobile player.

    Volcanoes with blue lava

One of the ideas that I see most others talking about is the blue lava, which ended up not being added in the Nether update. So my suggestion is to add a volcano variable that spits out blue lava.

This is a real volcano located in Indonesia, its color is because of the sulfur found inside. Normal lava could have this color when it comes in contact with sulfur. Speaking of sulfur, a yellow ore, it could be found in these volcanoes and have the function of fertilizer.

If this means infinite lava source then you get my vote.

the basalt deltas fill in this role, no need for one to be in the overworld. that would make basalt deltas less unique.

But how would the lava just come out if that's not how minecraft works? It's impossible for blocks or scource blocks to rise without any scource of powered connections unless there was some animation of lava rising from the volcano. And wouldn't that look really wierd?
