If you go into settings then touch there is a slider labeled sensitivity. I don't want to touch it because I like it great as it is, but you might want to play around with it.

The thing is, you're acting like everything else can interact with water as you describe. Except it can't. Waterlogging only involves source blocks, not flowing water. Glass panes CAN be waterlog...

I wouldn't call being able to duplicate gravel as gravel being renewable... I seriously doubt any duplication ability is intended behavior.
