Item transport pipes wouldn’t need to be copper. Copper could be used for filters for sorting items in a pipe network. Copper needs to be used for wiring generators to electric furnaces and stuff

This would be so good and give copper more purpose

I agree, and it would make an excellent decorative block as well.  It wouldn't be that hard to make work.  Give each pipe a single inventory space, but no interface.  To get items out you have to either break the pipe or connect it to a container.  Pipes can only have one output direction, but you can connect multiple input points.  If two output or input points are placed adjacent, there should be clear space between them and the pipes should appear capped.

The recipe would be simple too, probably just a diagonal of three copper ingots.  Personally, I think that it should produce pipe at a minimum of a 1:1 ingot to pipe ratio.  This would make item transportation systems exponentially cheaper.

Also, copper doesn't have enough uses yet, and it would be a fantastic use case for it.  Copper pipes would be a lot cheaper than hoppers, say 3 copper for 3 pipes or something.  Maybe the copper pipes could operate just like hoppers, only they need a hopper on the receiving end to transport items.  Having cheap copper pipes would enable a mechanism for players to transport items longer distances without having to build lots of expensive hoppers using up all your iron.  I can think of lots of use cases for copper pipe as a transport mechanism.
