While the fletching table could have a lot of different uses, to me the most obvious is combining arrows with potions, to give them the potion effect. This would especially be nice in regards to weakness, when curing villagers.
The potion would be able to affect a specific number of arrows and depending on the length of the potion effect, this would affect the arrows effect length as well. This could potentially be affected by the number of arrows you create with one potion. ex. 1 weakness potion of 4 minuttes combined with 64 arrows would give you weakness arrows with a duration of 4 s ((60*4)/64=3.75). Potentially just as with regular potions, the effect of the arrows could be prolonged in the fletching table, with redstone dust.
This could also be useful in other regards than the weakness arrow (though this to me is the msot useful one), making it easier to optain arrows with effects in larger quantaties.
Potentially this could also work with enchantments, so instead of adding flame to your bow, it was added to a number of arrows. Adding infinity or multishot to the arrow could also work.
Lastly the fletching table could be used to make different arrow types in regards of their durability or damage. The reciepe would be an upgrade of the regular type with flint, where metal nuggets (iron/gold) could be added onto the normal arrow.
This way the fletching table would only need 2 spaces, the first for the arrows, the second for either a potion(+ redstone), a book or a nugget.
