Already, people have posted about desiring an arborist, a woodworker or lumberjack, a gardener, a beekeeper and so on. So how about this:
Farmers plant and harvest crops as well as care for animals. Their AI could use a little updating, but ultimately similar to the current meta, adding animal caring to their functionalities. They can now breed & slaughter animals (ideally others can too) as well as feed stray cats, wolves, foxes and whenever a bunny hops on by
If near crops, they tend crops; if near animals, they tend animals, but they also grow crops if at all possible
Gardeners plant & tend plants, including crops & trees, as well as care for the bees. Their job site block is the beehive. They trade for bone meal and grow grass/flowers which they then trim/pluck. They sometimes harvest crops (they always harvest berries), but really are more concerned with growing them with bone meal. From Gardeners, you get flower pots, which when placed, are attractive to these type of villagers. Also, Gardeners feed animals whenever they have that item and are near to the animal
Carpenters plant, harvest & work trees. If placed in an urban setting (ie no space for tree growing), they trade wood products and care for any trees around... by chopping them down, taking down as many leaves as they can and replanting. A woodworking block, I think, can easily be added in-game
Shepherds/Butchers/Leatherworkers remain as they are, but now they trade Farmers for meats, some crops, leather and wool.
