    I had this idea too and found your post so voted for it, think it would add a lot to the exploration aspect. One suggestion would be to make it dependent on movement, if you sneak it wouldn't activate and also the activation could be delayed a little to allow the player to move further over the blocks before activation, maybe only blocks that are surrounded on all sides by only air, sand and gravel could activate (so you would have to be at least two blocks in for it to activate). and with tricks to lay sand and gravel without support an easy trap could be made.

    It would be a good idea but by making sand, gravel, and other falling blocks experience a block update when walking across them would mean that observers could get a signal from this meaning very annoying traps and if every block that you walk on in a desert causes a block update that may cause some issues with frame rate but I'm not sure how block updates affect fps.

    this could also be used to make crazy player detectors too, where like an extended piston could be pulled when you stand on it, which would appeal to the technical community, new structures could be found by walking over intentional sinkholes forcing you to explore them, appealing to the adventurous community, if there was a way to intentionally suspend the falling block, it could also appeal to the pvp community by allowing more various and unique traps to be made. it could also appeal to the map-making community by adding a feature that can lead to interesting parkour courses or challenges to overcome where say you have to be careful not to touch the ground but it gives you a chance to get back up the first time. the only real issue that I see with this would be that often in deserts caves can run just under the first layer of the ground, which could ruin the look of the desert and completely destroy weak computers or old phones, so if this was to be added, it would need to be accompanied with generation changes to make it more feasible to run
