As everyone has already said, the Dragon fight is too easy. It doesn't deal much damage, and all you have to really do is taking down the crystals, waiting for it at the middle portal, and hoping it doesn't fling you 100 blocks into the air. Here's my thoughts:
Phases
Most boss fights come with multiple phases, and it would fit perfectly for the Dragon.
Maybe you can only damage it after destroying the crystals, or it flies to a different island once you get it to half health. There are many ways you can do with this.
What would be better is that at a certain point, a random phase out of many could be chosen. This would bring more strategy and skill to the table, since the player has to scheme over their best possible options.
[This will definitely come down to more luck for speedrunning, as certain phases may be easier / faster than others. It would be very interesting what that community would come up with...].
More Abilities
The Dragon can only fire "Ender Charges" at you and dive into you. This alone is nice, but it doesn't feel enough.
It could call monsters, or give status effects. Maybe it could create a new monster, like the Redstone Monstrosity and The Corrupted Cauldron from Minecraft: Dungeons. Of course, these are only examples.
Overall, the Dragon fight is heavily lacking in content. Since it hasn't changed in a long time, too many flaws have shown for the experience over the course of multiple updates.
