But, chopping down trees entirely will be much more tedious this way.  Considering how much forest covers the landscape, if you built a house in a forest then you would need to place blocks to chop the tree down completely, or leave floating trees all around your house.

To the comment about cutting down talk trees bring tedious. While I agree with your comment I'd like to point out that it already is. Not all trees are 4 blocks tall. Some are 3 some are 10. The tall trees that already exist, still get cut down. So raising the lower bound of tree growth shouldn't be an issue. Plus, I am only suggesting a raise to the smaller trees not all of them. And/or just making the leaves spawn higher. The player on a horse is 3 blocks tall. When a player rides thru a forest with unlevel terrain, they climb 1 block at a time. So they would become 4 blocks tall max at a time. Therefore leaves should spawn on the 5th block. Thus trees should be a minimum of 5 blocks tall. Not too unreasonable. Especially, if the some trees could have only leaf blocks above the 5th log block.

Or make players and horses able to clip through leaves while on them
