Currently in the game the villagers feel like simple tools that the player uses.
This in my opinion takes away from the villagers the feeling of having intelligent life and makes you feel alone in the world. That's why I think the artificial intelligence of the villagers should be improved.
To begin with I think that the villagers should self-regulate in the villages. For example if a creeper destroys a piece of the village a builder villager would repair it. Or if the population of the village is too high they would stop having children, and if it is too low they would have more children.
Also if the player hits a villager too many times, the villager can go to the nearest location of an iron golem and tell them, and the golem will attack the player.
Also the mechanics of the piglins with the theft of objects should be applied for the villages. If a villager sees you stealing, he will notify a golem and it will hit you. And the same if you break a villager's bed.
To add more realism and prevent mass kidnapping of a village, if a villager does not sleep in a bed for more than 3 days they will have dark circles under their eyes and will not be able to work. Also if they don't interact with other villagers they will become sad. These facial features can be seen on the villager's face.
Finally, I think it would be good if the villagers chose their jobs based on the needs of the town. It would also add new jobs such as: Builder, soldier, miner, mayor (this could give missions).
