Currently, you can only control the elytra by looking in the direction you want to go (or look up, stall your wings, and fall blindly to the ground). This is very limiting as often you might want to look at something below you but not divebomb into it. Looking to the sides is bad too since it takes you off your intended path.
To fix this, I propose a simple solution. Use the Strafe Left and Strafe Right keys for yaw control (turning), Walk Backwards for pitch up, and Walk Forwards for pitch down (down would be forwards since pitching down increases airspeed). This way the player would be free to look around while gliding in a straight line. This would be similar to how you can look around while traveling in a boat. If necessary, a floating crosshair or similar indicator could be placed on the screen showing the direction the player is gliding at. This would of course not be necessary in third person view.
This control change would, by necessity, bring a positive change in the gliding physics. Currently, you can make an instant 180 degree turn without loosing any extra altitude. This can be exploited to land virtually vertically, which is very much not how gliding works in real life. Using the strafe keys to turn in flight would fix this problem.
As a bonus a flaring feature could be added. Here, pressing the Sneak key or similar would flare the elytra, slowing down the rate of descent, which would allow for smoother landings.
