In the Village and Pillage update, Mojang added tons of blocks that functioned as little more than Villager job-changers. I guess to justify the addition of all these unique blocks, they gave them uses similar to existing blocks, with a twist, and when they ran out of ideas, they began moving existing uses to the new blocks.
The worst offender was the Grindstone, which entirely replaced the crafting-table tool repair method with no added benefit for non-enchanted items. Mojang realized that was an awful idea, and quickly added back the old system.
However, some blocks were chosen to replace the crafting of certain items. Although this makes sense on paper, it needlessly complicates the crafting process by forcing you to make an entirely different block for the desired item. The only ones that make sense are the cartography table and loom, as they greatly simplify the complex processes of maps and banners. The others, not so much.
The fletching table is more annoying than anything, because crafting important combat tools (arrows) is the last thing you should obscure. The smithing table is pointless as it's only used for making netherite tools. Gee, if only there was a block that combined 2 items, like, idk, the anvil or the grindstone? Stonecutters are OK, because they greatly reduce crafting costs, but that's not the point.
The point is that there is a worrying precedent for there to be many more crafting blocks for multiple features, which I fear would make the game too complex.
