    Agreed! Today I experimented with the large biomes world type (would recommend), as I'm also looking for a wide open area. I found a great one, except every 30 blocks there's a cave! I look underground and lo and behold, half the earth under my feet is air.

    I remember that in older versions of minecraft there were very advanced options for world generation. You could choose what biomes you wanted and at what levels ore spawned. I'm not sure if that still exists, but it should definitely include cave options! Also, maybe certain biomes like mountains and badlands could be more caved than others.

    In real life, flat areas are less likely to have caves, because caves are formed by water erosion that would also carve up flat land.

    I think a good solution would be to have a depth below which caves are very prevalent, but there should still be a good 30+ blocks of largely solid ground just below the surface. Then, have scattered, small caves that lead down to the lower areas. This way you can actually build on the ground, and if you want, you can find an unobtrusive cave and take it down to the massive sprawling network below.
