The End and the Nether are like night and day. One is a barren world of floating rock, and the other, a subterranean ecosystem fueled by an eternal heat.
Obviously, there is already a large contrast between these two realms. However, I believe a little more contrast could, and should, be added.
The Nether is an extremely hot place, and for good reason. Some sort of natural events of this realm (likely frictional heat from the Nether's core) have caused oceans of molten rock to appear, and since the entire Nether consists of tunnels and caverns, there'd be few places for all this heat to escape to, essentially making the Nether one extremely large oven.
As opposed to the Nether, the End has very few sources of heat, the main one being the heat generated by the ambient lighting of the void.
This, combined with the fact that the End is a very empty realm (meaning heat would have much space to spread out and get colder), would make the End a freezing place to be in.
Main idea:
-Water freezes a few seconds after being placed in the End, if it is not close to a heat source.
Extra ideas for inspiration:
-Small patches of packed ice spawn in the outer End islands.
-Some sort of freezing mechanic if you go too far from the main End island.
-Lava freezes into obsidian or magma after being in the End for too long, unless it is close to an even warmer heat source.
(This could be something like a lantern made with a Nether Star, but this is all just extra inspiration, and not part of the request.)
