Living within the great Plains region of the USA I always looked at Minecraft's Plains biome as, well, plain. I think it would be well worth it, especially with the new Wild Update to update the Plains biome with inspiration from the North American Great Plains.
A new neutral mob, the bison, could be added. They could be in massive(as much as performance allows) herds. This could be a great way to bring awareness to Bison, much like the Panda. A cool feature could be added to make the bison not a reskin of the cow, perhaps they could be used to defend areas from zombies? Just don't get too close of course.
Prairie dogs could also be added as a cute little creature who, if followed, can lead the player to their secret staches of goodies. They won't be too pleased if you steal from them though.
Another addition could be wild flower bushes. These would be bunches of wild flowers, about 1.5 blocks tall.
Boulders and large rocks of the new and old stone types could be added as well, much like the tall taiga. These rocks could be more common around mountains, or sharp terrain.
Around water in these areas tall grass and cat tails could generate, much like real life. With the new frog mob and fireflies residing in these pools.
