Villages as they are, are kind of static. That's not a bad thing, but it's not an incredibly exciting thing, either.
I suggest that some villages spawn with a locked chest in the square, and a lectern with a book and quill.
Taking the book triggers a day/night counter, and the book possesses a "build request" for the player to complete in a set amount of days -completion of which unlocks the chest.
Ex1: "This village needs to expand. Increase the population by 3 and build them a place for fishermen to work within 10 days"
(The game won't care what kind of buildings you make, just that the village size increases and there's a fisherman in the village now)
Ex2: "A zombie hoard is approaching the village. It will be here in 5 days. Reinforce the village so its population does not fall below X"
Ex3: "A group of witches has targeted the people here and this village asks you to be its guardian. Protect the village for 3 days and prevent the population from falling below 5"
Just an idea. I know not everyone will be interested in something like this, but I personally find the idea interesting. I know the missions can be cheesed ("I built 4 mud huts and a barrel! I'm done!"), but that, too, is Minecraft.
