Have the bottom Y axis change between chunks and Grimstone blocks
I'm not sure how to explain this, but let's say that the very bottom of the world, the lowest a block can go is Y=-64. But let's also say that chunks can end at random heights ranging from Y=-64 to maybe Y=-50? So you could go to a Y=-64 chunk, break through the side and build bridges just above void level between these Y=-64 chunks, with all the other Y=-50 and Y=-55 chunks around you like giant stalactites.
The chunks that reach Y=-64 would still have Bedrock spawn at the lowest points, but chunks that end higher would have to have a new block, breakable, but a lot harder, maybe an Obsidian-like durability, as a warning if you ever dig straight down. Though, if you EVER dig straight down, you kinda deserve to die.
This new block could look like Deepslate with some chunks of Obsidian/Bedrock inside, similar to how ore blocks look. This new block could even be blast-resistant, but movable by pistons, creating a much cheaper alternative to Netherite Blocks, for all your blast-resistant piston doors. I think it could be called something like Grimstone, because I think that was the original name for Deepslate and I like the sound of Stone, Deepslate, Grimstone and Bedrock for telling how low you are in the world, without using F3 or Alt+F4.
