I agree, there should be more variants. But, I feel like it should be according to biome. Having different variants of cows, pigs, chickens, etc. would only drop the same exact thing as its main variant. So, having it for different biomes would be more efficient. Here's what I was thinking:

Reptiles would be common in deserts, and amphibians would be more common in swamps and jungles.

Certain types of cattle would be in a certain biome, certain pigs would be in a certain biome, etc. Kind of like how foxes and arctic foxes work. Foxes are found in taigas, while arctic foxes are found in snowy taigas.

For birds, that would be a hard one. Parrots mimic things, and we could have had vultures, which stole things from dead players. But obviously, vultures were voted out and so we can't have vultures. For other birds however, the only useful one that would come to mind is an owl because of this post.

I also agree with the idea.
Like birds, reptiles and amphibians, I think we need a lot of aquatic life such as fish and a lot of insects.
There should be many animals, especially in the savanna and jungle.
For example, giraffes, grizzlies, crabs, crows, mantis, octopuses, eels, raccoons, snakes, lizards, leopards, monkeys, ants, scorpions.
