In the latest 1.18 experimental snapshot, the new topography generation has given way to many interesting and exiting formations and interactions with structures, one of which I found particularly striking.
While looking for interesting seeds, I found a mineshaft protruding from the base of a mountain at surface level (due to the surface being in a low valley), with minecart tracks leading from the sunlight deep into the earth where they protrude into a cave system. I had always found it odd that mineshafts are always deep underground, inaccessible from the surface, as it makes absolutely no sense.
So with the new update, while it has already been said they don't want to touch the already existing structures, just elevating mineshafts to be accessible from the surface more often would instantly make them more interesting, if not simply acting as a new cave entrance type. Even if just in mountain biomes or shattered terrain, simply increasing the height range that they can generate in would greatly benefit these structures.
