Maybe flesh this out a little more. It's a good idea, don't get me wrong, but you should probably have more stuff planned out if you're suggesting a feature that might annoy players (like a winter coat or something).

Great idea, and I know how this would work! Instead of a special item in inventory which prevents you from hypothermia, you can just build a house and stay inside. Minecraft code recognizes if you build something like a house, that is why endermen don't come inside of your house, but stay out.

This is kind of logical, because if you are inside of a house, you are warm.

Btw, the title for your idea could have been: Getting hypothermia on high places (ex: mountains)

Maybe you could "get used to it" over time or by eating some type of food often

Do you mean a hypoxia effect once you're high enough?

You should be able to acclimate to the thinner air, meaning you won't just take damage because you climbed a mountain, you would take damage because you climbed a mountain too fast. Additionally, the water breathing effect could prevent this entirely (making the turtle shell more useful, thus giving a real incentive for players to visit the ocean. {other than the trident, which isn't really that worth it because an enchanted netherite sword/axe would be better}) This would also encourage the use of modes of transportation other than the elytra, (without making the elytra obsolete) as using the elytra means you use 2 armor slots. (and can only wear 2 pieces of netherite armor)
