For both hostile and neutral mobs, they should become smarter or have progressive intelligence as the world advances, so that the early days feel fairer. For example, with zombies: they should never attack alone but instead group up with skeletons or creepers that actively seek them out, so they can face the player together. Another idea is to increase the vision range of all mobs, making it harder to escape from them (and allowing them to see through transparent blocks).
For the golem in villages, it should always prioritize the most dangerous enemy—for instance, if there’s a crowd of zombies, it should attack the creeper first and then the zombies. Continuing with the creeper, it wouldn’t necessarily need the player’s presence to explode; for example, if the player goes home, the creeper could blow up part of it, letting zombies or skeletons enter (like a criminal gang).
Now, for peaceful mobs such as villagers, there should be deeper interaction with the player beyond the simple “player gives emerald, I give item, life is good.” Something simple like villagers seeking you out, making sounds as if they were talking to you, or reacting positively when you treat them well. If you hit them, they should run directly to the golem, and the golem should no longer be tricked by the player stacking three dirt blocks upward.
This idea is meant to polish the game further, so please consider it. :)
