Most people end up suggesting a temperature mechanic that makes you change armor all the time and use a lot of items which is annoying so I have a simple idea to add this in a way that actually makes the game better and gives more uses to leather and chainmail specifically:
First we need this to only matter in specific situations so you don't have to constantly think about temperature so this mechanic will only matter in snow and the nether and will be easy to survive; having full armor in the nether will make you start dying from hyperthermia, so just taking one piece off is enough, but to compensate this you can wear chainmail armor without your temperature going up AND you'll be able to use it under other armor to give you 1 armor toughness so you don't lose much protection (maybe this applies to really hot biomes like deserts too). In cold biomes you'll need at least half armor to avoid getting damage from hypothermia but when it starts to snow you'll need more armor or a leather piece and another one if you're inside powder snow (maybe this could also happen if you're underwater in a cold biome).
Finally we could expand this mechanic so without armor or with chainmail you stop burning faster, with armor it would take as much as it already does and with leather it would take a bit longer.
With these changes not only leather and chainmail get really useful but we also get a way to stop burning faster and a mechanic that makes cold and hot biomes more challenging.
