It could be interesting if zombie horses had the ability to attack regular horses and, after a few hits, there was a chance for the normal horse to turn into a zombie horse — similar to how zombies convert villagers.
Players might even be able to cure the infected zombie horse using a golden apple and a splash potion of Weakness, just like with zombie villagers.
As a fun detail, maybe a cured horse could show trust toward the player who healed it, for example, by following the player, similar to how horses follow when you hold golden carrots.
This would add new depth to mob interactions and give zombie horses a more meaningful role in the game.
