I don’t understand, was there already mutton in the first slot? Or was there only mutton in 5th slot before the golem started putting items in?

Mutton was in the 5th slot first

It works better for redstone since if you want a golem to organize a specific category of items and have a hopper only pull out the item that the golem puts in (which would require the item to be in the first slot), you won’t need to rename all of the items that tell the golem what items it’s able to put in so that the item will go in the first slot.

I might’ve explained it poorly, so if you don’t understand, watch Mumbo Jumbo’s video “Item Sorting just changed” and you’ll see what I mean.

I watched the video 'Item Sorting just changed,' but I still don’t really understand what you’re trying to say. I’m not a big redstoner—I’m just a Minecraft player, and I’m not that advanced with Copper Golems.

Yes! This makes sense, Copper Golems should stack items if possible. The default behavior puts them in a separate slot.

If you look up any redstone automated storage system using copper golems, you'll realize that this exact behavior enables them to work. my advice to you is to not leave empty spaces in the top-right of chests, and then the copper golem would stack the items.
