Thats funny how I was gonna propose a “Curse of the Undead” enchantment, my ideas a little bit different but I also like how you described what a potion could be capable of. So why not connect them I say! Check this, a rare “Curse of the Undead” enchantment book can be found in witch huts, buried treasure and a few other structures. This enchantment on any piece of armor turns that player into a zombie or skeleton on death depending on how they died, leaving it with a copy of their name so it won’t despawn. Potion of harming unlike any other potion could be enchanted with the Curse of the Undead to enhance it to a Potion of Undead. It could make mobs and players take damage during the day if not under shade, and all of the features the guy before me mentioned like
-smite would have a great effect on those affected
    -healing potions hurt
    -lower regeneration
    -hungry
    -harming heals
It will also make mobs hostile towards ones unaffected as if they’ve gone mad. This effect unlike others has no timer and will permanently stay until players or mobs die. Player’s hunger bar only increases with meat based foods. Plants and berries are useless while curse is active. Animals can use golden dandelions to stop effects of the curse and players would need to put the Curse of Undead potion in a cauldron and interact with it to put a golden dandelion inside turning it a gold color. The outcome of this should be called the Potion of Undeadly, which serves as a cure to Potion of Undead.

Potions of Undeadly amongst curing the living, can turn only the base versions of zombies and skeletons into random baby mobs. It can also revert adult animals back into baby mobs. Forgot to mention that the Potions of Undead can instantly turn villagers, vindicator, evokers, and pillagers into zombie villagers. Plus it can turn zombies into skeletons and Piglins to zombie piglins. Witches and skeletons are immune to the Potion of Undead. Can be turned into a new Infection potion by now using the brewing stand to brew infestation potion above a Potion of Undead. Infection potion is similar to the infestation potion but it now spreads zombies. Brew  a Potion of Undead above a Infestation potion to make a new Infliction potion, which can do the same as the previous two but now skeletons appear. Brew the heart of the sea above a Undeadly potion to get the a new Starring potion. Starring potions locks a entity in place until hit. Brewing starring potions above infestation potion can produce a new Stalker potion. Stalker potions is also similar to infestation but endermen appear.
