Chainmail in real life was used in medieval times as protection against cutting weapons. My suggestion is that chainmail in Minecraft should also give more protection against bladed weapons and tools — meaning that swords, axes, shovels, hoes, and even shears (as a fun little detail) would deal less damage to the wearer. The protection would scale with the amount of chainmail pieces worn.
This special defense would be a built-in property of chainmail, independent from enchantments. Enchantments like Protection would still reduce incoming damage in general, including bladed weapon damage, but would not specifically boost the chainmail’s inherent blade resistance. This is similar to how gold armor has its own unique property with piglins, or leather protects against freezing.
Why this could work:

Balance: Chainmail only gives 12 armor points, so it remains weaker than iron, diamond, and netherite in general defense.

Specialization: The extra protection applies only to bladed weapons; other damage types (falls, projectiles, explosions, magic, etc.) remain unaffected.

Exploration incentive: Since chainmail can’t be crafted, its added utility would make it more desirable as loot from exploration, mob drops, or villager trades.

Strategic gameplay: Players might choose chainmail when facing mobs that use bladed weapons (e.g., vindicators), but would still need other armor types for different threats. Mobs wearing chainmail would also benefit from chainmail's buff, increasing the challenge
