I think all of the datapack creators trying to make custom items have run across this at least once. Minecraft's existing crafting framework that's built in to datapacks does not allow for ingredients or products with any kind of NBT data at all, forcing us to use a lengthy and unwieldy system based on the knowledge_book item.
While this method works fine, NBT crafting would open up huge opportunities to datapack creators wishing to create high-quality content. People who make datapacks about alternative crafting recipies for existing items could then expand into making better content involving NBT items with actual abilities, instead of just creating the same thing over and over.
