Worms: breaking an "infested" dirt block would drop a little crawling worm. This could be used to add bait to fishing rods to increase fish catches (good for more pufferfish or food source).

Fireflies: you put more than one in a jar, up to X amount, to increase the light level (small, discrete, customizable lighting). Otherwise they glow like enderman eyes in the wild. Could even just be a particle effect in swamps?

Termites: I imagine these will be used in tree farms, or as a deleterious effect on wooden builds (infesting a wood block and causing it to turn into an item entity). Grubs could be another form of bait (honestly all of them could be used as bait if it made sense, it could really add a lot of fun depth to the fishing mechanic), can feed them to birds to breed them.

Locusts: hanging out on trees and occasionally flying around, making their famous noise, adding a lively ambiance to forests. Might eat crops. Is that really that big of an inconvenience?

Dragonflies: comes in several colors, looks dope, lands on lillypads and occasionally follows the player briefly.

Scarabs: fly around, could be used in a talisman, looks cool in an item frame (along with the rest!)

Butterflies: several variations, looks beautiful in a flower forest, could include a caterpillar, or even the whole life cycle (chrysalis, etc). Destroying their habitat could cause them to disappear.

Thinking about it more, and if you want to put the bug in an item frame, you will need a bug net. Use the net to catch the bug and you will get the bug as an item, to be placed in a frame or any other crafting recipe. If you want to catch them alive, use the bottle or new jar item, which can be used to transport them like a bucket if you dont intend to keep them in the jar. Simply right click the jar on the bug to catch, or on a surface to release. Naming the jar will ensure they dont despawn.

Bugs in a jar should have an animation 100%.
