Currently, villagers can only become willing if they have enough food in their inventories; this works great, but it is a little unintuitive and the chances of it occurring naturally are iffy . If a new player were to find a new village and settle in, for example, there would be a good chance that their village's population would dwindle quickly due to monsters. In theory, that's fine; all they need is some food (probably from a farmer) to repopulate. A newer player probably wouldn't know to chuck a bunch of food at the villagers, so that job would fall on the farmer. However, with the random way that villages generate, it is very much possible that the farmer won't be able to provide for the village (he also could've died). If the villagers were to breed because of trading, it would reward the player's dedication and work that they put into the village by not letting the player's work go to waste. Breeding through food would definitely have to be the better way of breeding; I'm not suggesting that you could trade with villagers all day and get a ton of babies because that would pretty clearly be overpowered. If you were limited to one or two babies per day or couple of days through trading, it would be enough to get a new player's village off the ground.
