Minecarts should be useful for Mining.

At the moment Minecarts are only viably used for transportation and automated farms.
I think it would be very good for 1.17 if the minecart system received some kind of rework or overhaul to make them much more useful for resource gathering and caving. Maybe start by letting rails be placed in front of you in a line like scaffolding.

  Minecarts with Chests are a thing, that's kinda useful... (plus, transportation is very useful).
