    If we had that then we would have absolutely no water

    I think the opposite, I feel they should be used as a catalyst for farming in the nether. With a cauldron allowing dirt block place immediately next to it the minimum amount of moisture to farm (4 total blocks) and no other change as hot gases condensate on cold surfaces.
