After the player defeats the ender dragon they should be able to move the ender portal.
Also, since The new Y level has changed, Mojang could have bedrock still be at Y:0, and the new cave biomes can be underneath Y:0. Having a new ore found in the end would create a new goal for the player, because breaking bedrock should be impossible. After they break bedrock they could openly explore the new cave biomes (and collect lots of loot from them). The new cave biomes would most likely have alot of rare loot such as diamonds, new dungeons, rare new ores, or whatever Mojang brings to the table. Bedrock would be a worthy barrier. It would be a major road block, but it would pay off.
