    When you are starting a new world (and this can only be done before world generation, I think), click the "other world options," go to "game rules," and there is a long list of items that can be turned off, such as pillager patrols, fall damage and other things that I can't remember; in there, is the wondering trader. This is in Java so could be a little different for Bedrock; sorry if it isn't possible on Bedrock and you're requesting that it be. Of course you can create a dispenser device that will annihilate everything that stands in range of the build your trying to protect;)

    Also, please put the other things that you mentioned in their very own post or explain the general idea that relates them to each other. If you do that too much it will be considered a spam list and be removed.

    It's possible to turn off mob spawning if that's what you're looking for (but you can still use spawn eggs). Anyways I play on Pocket so it might be different
