There's been much debate over the new iron ore textures for the caves and cliffs update, trying to balance visual distinctiveness with aesthetic appeal. One possible solution is to model the iron ore texture after a real world type of iron ore: banded iron formations (BIFs). BIFs formed when iron oxide (rust) settled out of the oceans onto the seafloor, forming flat, horizontal, banded layers. None of the other ores have a texture quite like this, so it would be visually distinct, and if done well, the texture could be quite pleasing to look at. It could look something like this though the actual texture would be up to the Mojang art team:
