With the promise of a new texture for ores found in the depths of the world, I've come up with an idea to improve ores in general: Perhaps all ores could be lumped into a single block that can represent almost any combination of ore & block through its tags. The new block would be capable of looking like the block defined in one tag, but another tag would define a loot table and transparent ore texture to be layered in a manner similar to grass blocks. It would use the block's properties by default, with a slight increase in break time to differentiate it from the regular block variant. This would mean that a wooden pickaxe could be used to mine a diamond if it's embedded in stone, and that a stone pickaxe could be used to mine gold in the same context. With a possible exception to gold, this likely wouldn't break the game progression severely, and might only remove the frustration experienced by new players who may accidentally mine a diamond with a stone pickaxe, only to be met with a damaged pickaxe.
With this system in place, the obvious use would be for the new Grimstone block, but as an example, naturally occurring Diorite, Granite, and Andesite could contain ore. It would also give the bundle more value to miners, since ores could be found in a wide range of blocks, not just stone and grimstone. In addition, mapmakers & modders would be able to easily make custom ore types, leading to new custom ores and ore combinations, e.g. ender pearl ore or nether lapis lazuli ore.
