The lower into the world you go, the rarer the mobs that spawn.
Near the surface: Armorless Zombies and Skeletons, Creepers, Spiders. Simple enough
As you near Y=0: More Endermen, leather-chainmail Zombies and Skeletons, maybe a chance of Strays and Husks.
As you near Y=-64: More witches, iron-gold-diamond Zombies and Skeletons, Spider Jockeys, Chicken Jockeys, Max Slimes, Skeleton Horsemen
This would keep in-line with the idea of having caving being an adventure each time. Every cave you enter gets more difficult the deeper you go, beyond just having Grimstone take slightly longer to mine, and having the Warden, a mob exclusive to the Deep Dark Biome.
