I suggest adding a nest / habitat for endermans.
They would generate in all dimensions (only underground in Overworld). Built from different blocks from each dimension.
Rarely, more expensive blocks of raw materials could be generated, the collection of which could enrage the endermans or eventually spawn a few bad endermans.
