Currently, there are few opportunities for generation customization when making a world. The terrain generation tends to be a bit hit-or-miss, even with those options, as you can't see the outcome until the world is generated. I would like to propose there be more options for deciding how the world generates at world creation, such as terrain, biomes, and ores, along with a preview of what the world will look like around the world spawn. There also should be a way to decide how amplified or realistic the generation is, like a slider. A 0% amplified world would ideally have no floating blocks or islands and all the terrain and biomes would flow together, while a 100% amplified world would just be a classic amplified one. Rivers also need some work done, it's hard to find a consistent one that leads somewhere. Trees could also use some more variation and dynamic shapes to add to the overall vibe and feel of the world. I also personally think that it would be nice to have the option of a 256x256 world in Java edition, like the old style in bedrock. I think this fits with the caves and cliffs update the best, especially since the really tall snowy mountains could probably use a little work.
