    I like this! Especially because the prisoner following you gives the impression that you are rescuing them, but also could be a useful mechanic when advanced players want easy-transport villagers! They wouldn't spawn consistently, so they would still have to be found and transported, and brought to where the player wants and healed in order to be useful, but they would be slightly easier to handle and not as ridiculously annoying. Great job with this idea!

    Another idea would be unlocking an advancment when healing, or putting the work station on a prisioner villager. The advancement should be called "Prision Riot" or maybe "A succeseful escape".

    When giving the villager a job, it should be giving the same discounts as the healed zombie villager.

    maybe there woould be a new illager that would be in his or hers cell and hit them but the villager has natural regen so woujld heal until the next hit but if you give it a job it has no more natural regen.

    By a "dark oak texture" I mean a dark oak variant of the villager clothing.
