right now beds kind of break Minecraft. being able to skip night means no hostile monsters outside and it means there's no reason to mob proof areas of you world if all you need to do is carry a bed with you.
so because its too late to remove the functionality you instead make the requirements for sleeping in a bed harder to achieve
the first big change is you cant sleep if there is a full moon and i also think it would be fun if mob spawns doubled
the next change is phantoms. instead of phantoms only spawning when you don't sleep they spawn like a normal mob but are pretty rare and give the player insomnia for 4 Minecraft days.
and finally sleeping takes time. instead of sleeping being instantaneous the day night cycle moves 25 times faster than normal.
this next change might be too harsh but maybe being exposed to sky light could also prevent sleep
