Currently, copper is set to be used to craft any new tools or armor. However, with a mining update as big as caves and cliffs, I think having more tools and armor sets to advance through would make mining higher tiers of ores (diamond and netherite) more rewarding and important. However, copper is seen as a weak metal, so placing it below iron would make it redundant, as it can easily be skipped and would have no use. But placing it above iron wouldn't make logical sense.
So I propose using the smithing table to create "Rose Gold" tools and armor. Adding a copper ingot to gold items in the smithing table will convert them to Rose Gold (real life name of gold + copper alloy). I imagine them being a tier above iron. With just slightly more durability, the same mining/attack speed as gold, and enchantibility just below gold.
I Think this idea fits great with the mining theme of the Caves and Cliffs update, and gives the smithing table more than just netherite use. And this gives players an introduction to the use of the smithing table before they head to the nether to use smithing soley for end-game gear.
