One thing that's always bothered me about Minecraft is how Redstone Torches, despite being red, still give off the same coloured light as torches (albeit a dimmer light), and how when a torch, glowstone, a sea lantern, or anything similar gets placed behind stained glass, the colour still stays the same.
I think it would be great if the colour of lights could either be manipulated by stained glass or you could just dye torches and other light-emitting blocks (or both!) as light colour can have a huge impact on the atmosphere in a room.
For example, imagine jumping into an ocean, finding an Ocean Monument, swimming inside and then seeing that everything is lit up in a light-blue colour to make everything feel more aquatic.
Or building a haunted house and making it look evil and menacing by making the lights red.
It's just an idea, and I'd love to hear other people's thoughts on it.
