The Overworld needs more challenge, but it's enough if only one biome is harder than the rest. That's why we need a more challenging ice biome, sort of a artictype biome and it would be fun for casual players and challenging for the hardcore gamers. Here is my idea that sleds powered by snowfoxes(or dogs) that run faster than horses on snow, would be perfect and study the ice that's below the ice, with mysterys fossils. But if you want to survive alone, you need warm clothes and campfires to hold you warm and don't get sick(weakness, slowness etc) and strong tools to defeat the mobs. For the "Deep Sea" you need something to storage enough oxygen to breathe down there and something to protect you from the swordfish that can sting little fishs and the lantern fish that hunts all the smaller things deep down there, the surface is covered in black smokers(these little underwater volcanoes) made out of coal and obsidian blocks. A wale would be cool to, if you can swim with them like dolphins and they protect you from all danger. The new voted glowing squid would fit perfectly in this new environment. I think the "Deep Sea" beginn at 50-70 blocks under the surface and would go deeper, when after the Cave Update the cave go deeper, that the max. depth would be around 180 blocks near bedrock.
