Minecraft has a wide variation of blocks, but I would like to see more stone blocks of more neutral/mild colors. Currently, we have more than enough options for gray stone blocks (from cobblestone to basalt), a good number of white stone blocks (from diorite to quartz), but almost nothing in terms of brown or rather beige or tan stone blocks.
In real life, especially skyscrapers, town halls and other concrete buildings, there is a lot of beige and tan colors that can't really be replicated into Minecraft. Lets say I wanted to make the Empire State Building. What stone block should I use? Sandstone? Too yellow. In fact, that's the only stone block closest to the color that the Empire State Building has. The closest block in terms of color ONLY would be Oak Wooden Planks, but that has a wooden texture and its clearly not a STONE block. It would be nice to have stone blocks of similar colors to the brown that oak wood has, or the beige that the real life Empire State Building has, and that many other buildings have. Sure, we can use concrete or terracotta brown blocks, but those cant be used in a stonecutter nor do they have brick or "rocky" texture.
The Caves and Cliffs Update would be the perfect opportunity to add various colors of stone/rocks/bricks that can be found in different caves biomes and even mountains (similar to how granite, andesite and diorite are found in both caves and mountains).

(this building is exactly what I'm talking about)
