With the Nether Update, Mojang added 2 new vine variants, the twisted and weeping vines. The weeping vines are helpful if you're trying to descend to a lower point that is far enough away thst you would take damage by simply dropping down, and the twisted vines are helpful if you need to ascend a large area without towering up. But there are still no horizontal growing vines, which is where the canopy vine comes in.
These vines would spawn near the top of jungle trees, and would bridge across to another tree. Breaking them would work similar to twisted or weeping vines where you only get a small number of the amount you break for balancing reasons. Just like the nether vines, they can be bonemealed to grow rapidly, however unlike the other vines, they have a limit of 30 blocks. This means that you cant cross outrageous gaps with them, but they are still useful. The other slight disadvantage they have is that it could be a little difficult to cross larger gaps with the current climbing mechanics. That provides further balance to them however, as it means that they cant be easily traversed and wouldn't be broken. They would be a wonderful alternative to bridging across gaps, especially if you dont have the blocks needed.
tldr: They grow like horizontal nether vines and can be bonemealed up to 30 blocks out. They are balanced through the length limit and the difficulty to cross them with the current climbing mechanics, and they spawn at the tops of jungle trees.
