I LOVE the latest update on the villagers, but I believe there are still things to explore with them... As Minecraft continues to grow and turns more and more complex than it was when it started, I believe it's time to implement tutorial NPCs. Forcing the player to go through a tutorial before REALLY starting may take from the experience, as some people want to learn, but they don't want "hand holding" in their gameplay experience. This is why I believe Villagers are the best NPCs to turn into guides. The way I see it, each villager could give the player insight on their respective specialty.
Example: Player speaks to a farmer villager, and instead of going straight to trading, they greet you, "Hello! how can I help you?" There'd be two options, trading and farming info. If you were to pick the latter, the Villager would give you insight on farming, and tips like: "If you have too much seeds, throw them in the handy-dandy composter! If you fill it up, you get some bonemeal to help your plants grow!"
I've been following Minecraft for years (since 1.3), learning about each feature in detail as it comes out, but I know people who miss out on cool features, or simply lose a bit of motivation because they don't understand some mechanics very well. I think this would give the villagers more life and help newbies or veterans who haven't played in a long time. Moreover, it's not a forced feature, and you'd still need to find a village to take advantage of it, so I think it's fair.
