Absolutely. Plus, this is already possible with Optifine, but having this feature natively would be so much more useful without needing third party clients, similar to custom item textures which are already possible

Optifine allows that, but I just want to have the latest safety features, and have the new features in the caves and cliffs snapshots too. Just to let you know, when it comes to modding, I go for datapacks.

This is definitely need. Optifine is slowly becoming outdated with the newest versions (doesn't do the improvements it used to) so this being built in would be perfect especially because Bedrock already has it.

Why isn't this a thing yet?

This. Custom entity models should have been supported natively on java for a long time. Having to rely on optifine to update to use custom models in new updates is not fun.

I agree, I tried to add custom models for hours only to realize it's impossible, really frustrating!!

Due to players not being able to rely on others having optifine, and the use of plugins to make custom creatures randomly causing the creatures to break/lag behind, this would be an amazing feature for Java edition. Due to players being able to disable resource packs and already being prompted whether they want to download the resourcepack or not I do not see this hurting anything. This would allow map makers a new creative spirit, We can already add amazing things to the game, this would allow for groundbreaking things via datapacks. As a person who makes datapacks, I would be very excited if this were to be added.

As a Minecraft player, I really do enjoy creating and part of that is creating texture packs, when making custom entities I feel that it kind of sucks for those who don't use Optifine or other types of mods that allow for CEM so it would be really nice if Mojang does add this. I have a PC that isn't the best which is why I used Optifine but I found a mod that boosts my FPS better, and now I can't use my texture packs properly because it doesn't support CEM like Optifine does. Really looking forward to a time when this is officially supported on Vanilla Minecraft.

We REALLY need this along with assigning entity AI to other entities
